The Dalmore Constellation 1991 20-Year-Old Cask is a celestial experience, limited to only 233 bottles! This rare and exclusive whisky–a collector’s dream, invites us on a journey through time and flavor.
This expression from 1991 began its maturation journey in ex-Bourbon American oak casks for 11 years. Following this initial maturation, it was carefully moved to Lepanto brandy casks for an additional 6 years of aging. The final touch was imparted during a 3-year finishing period in a Dalmore bourbon barrel, then bottled in 2012.
The Dalmore distillery dates back to 1269, renowned for luxurious and complex whiskies; the brand’s emblem, a majestic stag, symbolizes power, nobility, and longevity. Last time I checked, the few bottles remaining had a price tag exceeding $14,000.
The exclusive opportunity to sample this incredibly vintage whisky presented itself, and now you can join me in the virtual experience. Let’s begin.
Tasting Notes for The Dalmore Constellation 1991 20-Year-Old
Appearance
The Constellation 1991 appearance is reminiscent of a sun-kissed autumn forest. The whisky’s viscosity is evident in its slowly descending legs.
Nose
The initial aroma is bursting with life, so much to take in. My senses are filled with delight transported through layers of orchard fruit, pear, apple, peach; underneath, a subtle warmth of cinnamon, nutmeg, and ginger emerges– a sweet and spicy dance. As the glass opens, a touch of oak, Cuban cigars and vanilla. Wow, the complexity is so dramatic here, now I notice caramel, malt, fudge, and a sharp hint of brandy.
Now, I can’t wait for the first sip.
Palate
My first sip coats my mouth, a smooth and velvety texture, revealing the sweetness of pear and apple, apple fritter, fig cake, bananas, and fudge. There is so much going on, fresh layers of sultanas, spicy notes, particularly cinnamon and ginger, a bite of brandy providing a delightful counterpoint, adding warmth and depth. Wow, the palette is electrifying. I am drawn in for another sip.
Complexity
The Constellation 1991 is a masterpiece of complexity. The various flavors intertwine seamlessly, creating a harmonious and satisfying experience. You can only go deeper with each sip. The whisky’s age is evident in the intricate layers.
Finish
The finish is long, lingering, and oh-so-smooth. The sweet fruits and spicy notes stick around, fading gracefully. Now, what remains is a subdued oak and leather finish, a satisfying conclusion to this tasting experience.
